1/3 cup avocado oil or melted coconut oil
1/2 cup + 2 tablespoons maple syrup
1/4 cup your choice of milk or water
3/4 cup pumpkin purée
1 teaspoon vanilla extract
1¾ cups whole wheat flour or all-purpose gluten free blend
1 teaspoon cinnamon
1/4 teaspoon ginger
1/4 teaspoon cloves
1 teaspoon baking soda
1/4 teaspoon baking powder
1/4 teaspoon salt
1 tablespoon coconut or granulated sugar
1/4 teaspoon cinnamon
1/2 teaspoon cinnamon
1. Preheat oven to 350°F. Lightly grease one 9×5 inch loaf pan.
2. In a large bowl bowl add the oil, maple syrup and beat with a whisk or use the whisk attachment of an electric mixer. Add eggs, mix until well combined. Add pumpkin puree, milk or water, vanilla extract, baking soda, baking powder, cinnamon, ginger and cloves and blend well. Add flour into the pumpkin mixture and fold with a rubber spatula or large spoon until well combined and smooth.
3.Pour batter into loaf pan and sprinkle with cinnamon and sugar on top of the pumpkin batter. Bake for 50-55 minutes until knife comes out clean. Slice and top with your favorite World of Chia flavor.
